A Must-Share recipe from the Tate kitchen :)
My mommy likes to call Chris and I "foodies." After much defense to this name, I have given in. It's true. We cook together for basically every meal. (I take that back...Jordan is NOT a morning person. Chris makes me breakfast basically every morning.) But-when we are cooking, it's like a scene out of a food network cooking show. I swear we'd be the most entertaining of them all (aside from Paula Dean.)
Anyways, Chris being a health sci major, we can assure you that our recipes our usually extremely healthy, but the good kind of healthy that NEVER sacrifices flavor to cut back on calories. We're spice lovers with a passion for ethnic foods especially.
This is a crockpot dish that does all the work for you, and turns out DELICIOUS as long as you like peanut-y dishes.
Ingredients:
Boneless, Skinless Chicken Breasts (3-4)
1 Large Onion, chopped
1 can (14.5oz) diced tomatoes w/green chillies (undrained)
2 cans (14.5oz) crushed tomatoes (undrained)
3 tbs. honey
1 1/2 tsp. ground cumin
1 1/2 tsp. ground cinnamon
1/3 cup peanut butter (any style)
2 cups cooked couscous
1) In skillet, heat oil and cook chicken until browned. (I cut each breast into 3 strips giving me about 9 separate pieces just for serving preference.)
2) In crockpot, mix onion, cans of tomatoes, honey, cumin, and cinnamon.
3) Add chicken (either whole breasts or sliced) to crockpot, and spoon mixture over chicken until covered well.
[Optional: For an extra kick, after chicken is covered in mixture, sprinkle a light coat of cinnamon and a small drizzle of honey over top, without mixing.]
4) Cover and cook on low 6-7 hours.
5) When mixture is finished cooking and still warm, add peanut butter and stir.
6) Right before serving, cook couscous as directed on package and serve warm topped with crockpot mixture.**
**Before adding the chicken to the crockpot mixture, I spooned out about a cup of the liquids that had melded together from the canned tomato juice, onions, and spices to use in place of some of the water needed for the couscous recipe. This gives the couscous a more savory flavor that really compliments the crockpot dish well!!
This recipe is perfect for setting up in the morning and not having to worry about it! The couscous only takes about 5 minutes to cook and then clean up is super easy!
